From the moment we entered, we felt noticed and heard. The welcome drinks and bites were incredible, the actual restaurant counter space itself was exquisitely designed. I appreciated the hints of whimsy, particularly with the Virtue Pairing. The chefs and sommelier and front of house staff obviously took their jobs seriously, but weren't stuck up at all. They were able to converse and their script they had for the various courses allowed for some comedy, which was appreciated in such an intimate 12-seat environment that could otherwise be intimidating. The food was also spectacular and so well thought out. I appreciated the care taken towards the Virtue Pairing as well. It wasn't sweet mocktails with scraps from a normal bar; this was intentionally crafted drinks using real techniques like lacto fermentation, clarifying juices, and recreating wine without the alcohol, all done in house.
