The Bird

Our Chicken is lovingly reared by our friends at Fosse Meadow Farms using slow growing breeds and traditional free range techniques. The result is a bird reared 4 weeks longer, growing to an average of 1.8-2kg and tasting incredible. All our chicken is then brined for 24 hours to flavour and keep the meat moist during cooking. Smoking takes place in house, in our own Absurd Marinade
