Palacio Provincial was built in 1874, and the restaurant takes its name from that year. The courtyard at the center of the building has been open to the sky ever since. Exposed brick, palms, and the San Juan Bautista Cathedral rising just past the wall.Chef Luis Cosme and Elías Maldonado work from a Mediterranean base and travel wider.
