Steakhouse
Situated in the Red Rocks country 17 miles southwest of Denver on Hwy 285, The Fort is a true replica of Bent's Fort, (1833-1849), the first American fur trade post in Colorado. The Cheyenne, Arapahoe, Kiowa and Pawnee traded and intermarried at Bent's Old Fort, creating an economic and peaceful exchange of cultures in an otherwise violent West. The Fort building is on the National Registry of Historic Places, and celebrates the many cultures that traded at Bent's Old Fort. Our menu features "New Foods of the Old West" including the best cuts of buffalo, elk and quail, grilled to perfection. There are vegetarian options inspired by American Indian recipes including Corn Beans and Squash, known as the Three Sacred Sisters. The wine list is awarded the Wine Spectator each year, and the nine dining rooms, with intimate seating, has a 350 seat capacity, with real adobe "beehive "fireplaces that burn wood in the winter and fall months. Romantic. Amazing views of the Valley and Mountains!

Enjoyed the Rocky Mountain Oysters and Bone Marrow. Then had a tasty duck. The atmosphere was relaxed and the ambience very nice. I like that the room size kept the noise down.

We’ve been here three times. We initially thought this would be a great place for special occasions but 2/3 we experienced poor service. The first bad experience we were given complementary dessert and 60$ in Fort Bucks. This time we came back to use the Fort Bucks and when I asked to apply them we were only allowed to use 20$ of the 60$- even through they expire this month. They they told us we could use 40$ but after actually doing the math on the way home I realized they only applied $20- this felt very deceptive. I should have looked closer at my check while there but we waited 40 minutes to get our check and I didn’t want to wait any longer to leave. My short rib came out very small and they gave me another full short rib after we were finished with our meal- this was a nice gesture but I had already ate. The servers are always very polite but there’s almost always something wrong- we’ve just decided it’s not worth the money we’re paying to eat here for the subpar service when there’s so many wonderful places to eat near Denver.

For decades The Fort has been one of the region’s top restaurants both for food and ambiance. Even during a busy Restaurant Week Saturday night that applies. Sam Arnold created something special and his daughter Holly has made it even better. Good enough for world leaders, good enough for me and with gratitude to live nearby and visit regularly.

We had a great Friday night at The Fort, celebrating our cousin Maranda's belated birthday. I partook in the Denver restaurant week three course offer, while everyone else ordered off of the main menu. Every time we go, I must order Julia Child's favorite appetizer on the menu "Prairie Butter" (bison bone marrow, served in femur bones with crostini). Apparently Ms. Child's niece lived in Denver, and when she came to visit she always ordered this decadent treat. The Fort is a great place to try local Colorado game. Among the four of us, we tried sausages made from rattlesnake, rabbit, antelope, and bison. Bison sirloins, elk sirloins, and roasted quail. Don't forget to try the "Trade Whiskey" cocktail that is flavored with red pepper, tobacco, and black gunpowder! Our server Brielle was amazing! The Fort has a storied history, and is a must-stop for "new to the West" out-of-town guests.

The food was good, but very heavy - even the vegan alternative. I ordered a Negroni. I’m admittedly picky about them, and it wasn’t on the menu, but it was one of the most bland and uninteresting Negroni I have ever had and it cost 1/3 more than most. I’d recommend The Fort for Happy Hour outside in the Summer - order a drink that is featured on the menu!

The FortResponded 6 days agoSusan: While I’m glad you enjoyed your meal, I apologize your Negroni did not meet the high expectations we’ve been known for since 1963. After almost 40 years in Denver, this was our first visit to The Fort and we were completely bowled over. The place, of course, is spectacular, in the hills above Denver. Why did we wait so long? Not being huge meat eaters we just never made it a point to go here. So we decided to go for Restaurant Week and the meal was absolutely superb from start to finish. If anything makes me want to eat more meat, it's The Fort. We had to try the Rocky Mountain Oysters, and I was very hesitant, but they were surprisingly tender and delicious with an awesome red chile sauce for dipping. The salads were large and fresh; the rolls amazing; the buffalo empanadas to die for with an amazing tomatillo dipping sauce; and our entrees superb. He had the buffalo sirloin and quail, which were tender and juicy, and I had the buffalo short ribs which melted in my mouth in their delicious juices. Our waiter Eric was fantastic - SO attentive but not overly so, and the live flute music was a perfect background. I was utterly blown away by how delicious every single bite of our meal was and we will absolutely return in the future.

This was our second year of visiting the Fort during Denver Restaurant Week. Altthough the small room we were in should have been quiet the larger table next to us was very noisy making it difficult to converse. Also, our reservation was early and the building had not completely warmed up yet. Other than that, a nice evening.

We hadn’t been to the Fort for years and decided to give it a try for restaurant week. The food was just OK- the carrots were very undercooked. The mashed potatoes looked as though they had been sitting around for awhile. The food was very overpriced for what you got. It was a very cold evening out and it was freezing inside even though we were seated next to the fireplace. The waitress was a little pretentious. Overall disappointed for what we paid.
