Bistro Colorado (BICO) Restaurant and Wine Bar is a farm to table chef driven concept where the cuisine is inspired by sustainable and locally procured ingredients when available and classical, time proven culinary technique. Our full service restaurant is complete with a full bar including spirits, wines, and craft beers. Our menu changes seasonally. We focus on fresh, vibrant dishes in the spring and summer and more hearty fare during the fall and winter months. We feature all natural whole food plant based and allergen friendly options. No matter the season our food is presented elegantly and artistically and in a very clean and well-maintained culinary environment. The plate is our palette and sauces, purees, and other food mediums our paint. We combine art with science and nature to present food that is always healthy and well prepared and served at the peak of freshness.

The best taste, presentation, proper portion size, and style in the greater Evergreen and Conifer area. Beats most of Denver, too.

Definitely underwhelming- my husband's fillet was good but bland, my duck was definitely not crispy. The service was really slow too and the ambiance was just not as nice as I was expecting for $32 per plate.

We had a reservation and although several tables lining the walls and more tucked away were empty, we were told we couldn’t sit at them. The only menu for the night was a Restaurant Week menu so that wasn’t the reason. The food and service are those of a fine dining restaurant but the seating, lighting, and overall ambience was unimpressive.

Had a great time dining here! We had a family dinner with our 2 small children and they welcomed us and treated us like one of their own family despite the restaurant seeming like it was only for adults. We would definitely come back!

We enjoy Bistro Colorado. I did miss the poached egg with duck confit, but the Benedict was good. Will need to check out dinner!

The Bistro Colorado is always an experience to love. The food is always unique and vary flavorful. The chef has the Midas touch with food. We always enjoy our dinning experience at the Bistro Colorado.
