Atmosphere was so nice and romantic. Our server Nicholas was very knowledgeable and he answered all of our questions. My date and I had a wonderful time. The food was fantastic! I got the bison burger and she got the vodka pasta.The pear sorbet for dessert was amazing! It was really nice to be able to stroll right into the connecting art museum when we were finished eating.

It has been a few years we've been there, and it was always one of our favorite spots. This experience suggests it has fallen off. The food was fine -- not bad, but none of we four thought it was the Proof of old. We had nine different items between us, none of which were memorable. The service has always had a "we are smarter and cooler than you, and you are lucky to be here" edge. But that was part of the charm, and consistent with the 21C ethos. It was fun to engage with that ethos, and the end result was always a great experience. The recent experience felt overall indifferent -- as if nobody really cared about the quality of the food or the quality of the service. I am sure they can do better again, and hope they care enough to do so.

The ambiance and overall vibe were great! Service started strong but declined throughout the evening, with slower drinks and half our table receiving meals about 10 minutes after the others. The steaks and sides were excellent, but the trout was dry and missing its sauce. Desserts were underwhelming, and none of us finished them. Overall, not a bad experience, but I expected more consistency and won’t be rushing back.

I had a 7:30 reservation for one (pre-celebration of my 60th birthday). The service was once again, the best. I've eaten here while in town at least a dozen times and each time has been exceptional. As the evening came to an end, I ordered a flight which took a little longer than expected but service and management apologized and made it a non-event. Thank you for another great meal!
