It was hard to get coffee refills and water refills, and it really wasn’t that busy. As the name implies, New Hope, MN, has a history of rebellion. Start your day with a breakfast of avocado eggs benedict -- two poached eggs perfectly placed over crispy muffins, complimented with rich hollandaise and a spicy avocado verde sauce on the side, perfect for dipping your buttery hash browns. The whole breakfast topped with a sweet pancake desert is enough to keep you going until a dinner with a mussel appetizer with a cilantro, agua chili, and tomatillo dip accented by fermented chili water. For an entrée, you cannot miss the salmon fillet set on a rock salt cushion augmented by a black garlic puree that leads to the miracle fruit desert.
