A modern dining destination in Hobart that centres on fire-driven cooking and refined technique. The concept brings together stone and flame as opposing yet complementary elements, shaping each dish through precision heat and careful craft. The restaurant positions itself in the realm of Japanese-influenced fine dining, where flavour is built from smoke, sear and seasonal produce, and each course is meant to feel purposeful and expressive. Expect an emphasis on smoky textures, bold yet balanced seasoning, and culinary execution that focuses on the transformative power of heat. The venue also highlights a thoughtful drinks programme and an inviting outdoor space designed for shared plates and extended evenings. Stone & Flame is part of Hobart’s evolving food scene, offering a tasting experience that leans into atmosphere as much as the food itself.

Belvedere feeds a growing global appetite for authentic local encounters intertwined with paddock to plate. Through thoughtful interactions, we will create experiences that talk to the providence of the site (through art and design) and to the produce we serve. The site’s colonial backstory serves as an entrée to its incarnation as ‘The Belvedere’ – a beloved Art Deco dance hall that shaped the city’s social fabric from the late 1930s. This story is memorialised in mesmerising chain art – featuring a 7.5m x 3m Kriskadecor panel.Paying homage to this memory, the new ‘Belvedere’ will take its rightful spot as a modern-day gathering place, inviting travellers, corporate crowds and locals to celebrate the best of Tasmania. From paddock to seashore, the menu will showcase the Apple Isle’s rich bounty of produce, and Cape Grim Beef will share centre stage with Meander Valley Chicken, local cheeses and artisan products.

Beautiful restaurant with stunning Derwent River & vineyard views. We offer tastings 7 days a week between 10am and 4.30pm, with Cheese plates every day and light lunches on Mondays and Tuesdays when our Shed Restaurant is closed. The original Shed was built on the Mt Nassau property in the early 1900's and met with it's demise in the 1967 bushfires. Built to replace the original Sheds were a Tractor and Shearing shed. In 2021 work began on "The Shed" Restaurant which has been built in the exact same footprint as the original Sheds and some of the wood from the old Shed were used to make the table bases. With our incredible head Chef Karen Jones and our Restaurant Manager Marion Leduc leading our team of wine and food experts, there is no better spot to sit and enjoy an amazing meal with awards winning wine.

Great experience with a wine tasting and lunch. It was a particularly busy day, but we had such a lovely time. Sandy went above and beyond, and managed a busy space extremely well. She was knowledgeable, engaging, and funny. The wines were all incredible, and the food was great too. Highly recommend!

Food was great and the arrival onto the property was fantastic coming over the bridge and seeing swans and cygnets and ducks and ducklings. The cherry trees were in bloom so it was magnificent. The entry was a bit hidden though. We went to the Front door and rang the bell but I don’t think that was the proper entry. Old world authentic feel from 1800’s. Food was fantastic . Table service was excellent.would be great venue for a wedding or romantic getaway or just rest and relax. I didn’t take the advice of the chef for the hangar steak and it was a bit chewy. Otherwise was excellent meal.
