    Waitress was never around. Never got a drink refill, never got appetizer. She said they were really busy.. We have seen them way busier and had way better service

    I’ve been going to Fujiyama for over 30 years, and I’ve never had an experience like this. I understand that hibachi chefs cook everything on the same flat-top. That isn’t what bothered me. What was different was the order and manner in which the food was prepared. Historically, I’ve experienced the rice and vegetables being cooked first, with the raw meats cooked separately. This time, the chef put raw chicken, steak, rice, vegetables, and sprouts on the grill together. The raw chicken was directly against the rice and vegetables. More concerning, the chef repeatedly used the same utensil on the raw chicken and then immediately used that utensil to toss the rice and vegetables, going back and forth between the raw chicken and the other food throughout the cooking process. That created a legitimate food-safety concern for me regarding cross-contamination. I understand that food on a hot grill can ultimately be made safe through proper cooking, but watching a utensil repeatedly go from raw chicken directly into rice and vegetables was enough to make me uncomfortable eating the meal. They offered to recook my meal, but that didn’t address my concern. I was there with my family, and no one offered to recook their meals or explain how the same preparation process would prevent the concern I had raised. At that point, I wasn’t interested in another plate. I was uncomfortable with what I had witnessed and we left without eating. When I brought my concern to the staff, the response I received was, “Respectfully, he’s been a chef here for 6 years.” That doesn’t address the concern. I wasn’t questioning how long the chef had worked there; I was questioning the food-handling practice I had just watched. I expected a food-safety concern to be met with an explanation, not a six-year résumé. The way my concern was handled ultimately told me as much as what I had witnessed.

    The cook was very entertaining and enthusiastic with his cooking skills making our experience so much fun. Side note: Fujiyamas does not offer a lunch menu on the weekend so be prepared to pay dinner prices.
